Our Peated Single Malt bridges the gap between the devoted peat enthusiast and those who’ve previously shied away from heavily smoky whiskies. Here, the peat doesn’t dominate — it complements. Gentle waves of earth and smoke enhance the sweet, floral, and fresh character of our spirit, creating a beautifully balanced dram to savour and enjoy.
The malted barley is peated using a distinctly Highland-style peat, producing an earthier, rounded smoke with minimal medicinal or iodine notes. We’ve intentionally kept the peating level to a subtle medium, allowing the whisky’s natural sweetness and complexity to shine through.
From milling and brewing to distilling, every step is carried out in our Melbourne distillery before the whisky rests in American Oak ex-bourbon barrels for up to eight years. Each barrel is matured and bottled individually — no blending, no compromise — to capture every ounce of authentic flavour.
Colour
Rich, golden russet
Nose
A subdued peat aroma combined with natural leather and overtones of kumquat and fruit mince tart. Sweet, but not overly so.
Palate
The palate reveals a tobacco leaf earthiness with layer upon layer of complex smoke intermingling with toffee and honeycomb. Lingers on the lips and palate, demanding just one more sip.
Finish
Astonishingly long and complex, an exotic mix of experiences.
