Our Peated Double Wood is a smoky, vibrant and exquisitely rich edition of the long time Bakery Hill favourite – the Double Wood.
Matured in American Oak for 5 years followed by a brief 6 month finish in a 50L French Oak barrel, this whisky is dangerously easy to sip at cask strength.
This unique and very festive expression has been produced exclusively and with great support from The Whisky List Australia.
Nose
A rich, vibrant peat aroma, with a natural earthiness with overtones of spring florals and fresh citrus and berries. Sweet but not sickly.
Palate
The palate reveals a tobacco leaf earthiness with layer upon layer of complex smoky peat that lingers on the lips and palette demanding just one more sip. Orange marmalade, dark berry jam and a rich nougat sweetness, rounded with balance oak influences.
Finish
Astonishingly long and complex, an exotic mix of experiences.

The Whisky List Tasting NotesThe first thing you should know about Bakery Hill is their whisky is all about consistency, balance, and a focus on a flavour profile more akin to a "highland" Scotch style of whisky, then a lot of other Aussie whiskies. They've been distilling whisky the longest on Australia's mainland, over 20 years, and in that time have truly perfected their craft.
TWL Ollie's verdict: "I absolutely love this whisky. The higher ABV at cask strength really helps elevate some of the spirit driven flavours, it vibrant but drinks refined, many years past its 5 year 6 month mark. The peat is there but it's more on the nose, as the extra 6 months in the 50L French Oak to finish this single malt has added a wonderful sweetness to balance out any peat and oak. This might be one of the best whiskies we've ever picked."
