Our flagship Classic Single Malt is the whisky that founder David Baker set out to create over two decades ago — a true reflection of Victoria’s answer to the Speyside style. Bursting with notes of spiced apple, nutmeg, honey, and rich malty sweetness, it’s an elegant, full-bodied expression of Australian craftsmanship.
Made from 100% Australian malted barley, milled, brewed, and double-distilled at our Melbourne distillery, it’s then matured for up to eight years in American Oak ex-bourbon barrels. Each cask is matured and bottled individually to preserve every ounce of its natural character — no blending, no compromise.
Colour
Light translucent gold.
Nose
A complex sweet multi layering of green apples, spiced honey with just a hint of cider.
Palate
The flavour ramps up kaleidoscopically from nutmeg through spiced honey to a firm cereal with a malty richness layered on as a finale.
Finish
Mouth filling, smooth and lingering, leaving a satisfying warmth. Inspection of the glass reveal amazingly luscious legs of this superb malt whisky.
