Having spent months on the High Seas from the very north of Scotland all the way down under, this special barrel was re-filled with peated spirit and left to gently recover for 11 years.
This American Oak hogshead had previously held sherry butt matured whisky from a very northern distillery in Scotland. Taste the influence of the high seas, sweetness, mild peat and above all the passage of time. This rare release is strictly limited to 250 hand numbered bottles only.
High Seas
High Seas is the end point of a 12 year labour of love commencing when a full barrel of whisky was loaded onto a boat and set sail from the very north of Scotland.
The barrel journeyed halfway around the world on the high seas before being decanted and settling into its Bayswater home, ready to be filled with signature Bakery Hill peated single malt.
11 years of maturation later (equivalent to a good 22 years in Scotland) and we are proud to present this very special Bakery Hill whisky. Matured fully in a single 220L American oak barrel (previously holding sherry finish whisky from a mystery Scottish distillery).
The day has come to open this beauty up and enjoy.
